Papri Chaat
Brief Description
Papri chaat is a famous chaat dish. It is also famous for Indian food street snack. It is generally prepared with papri, chickpeas, green chutney, boiled potatoes, sweet chutney and dahi.
Preparation Time 15 mins Cooking Time 30 mins Serves 4 Ingredients for Papri Chaat
For Puris
- Wheat flour - 1 1/2 cup
- Maida - 3 cups
- Oil - 1/4 cup
- Red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Heeng - 1/4 teaspoon
- Cumin seeds - 1 teaspoon
- Ajwain seeds - 1 teaspoon
- Vegetable oil - 2 tablespoon
- Salt as needed
For Green Chutney
- Coriander leaves - 1/2 bunch
- Grated coconut - 1/2 cup
- Lemon juice - 2-3 drops
- Green chili - 1
- Salt as needed
For Red Chutney
- Dates – 4 to 5
- Tamarind - 1 tablespoon
- Red chili powder - 1/4 teaspoon
- Salt as needed
For Yoghurt Mix
- Yoghurt - 4 cups
- Sugar - 4 tablespoon
- Curry leaves – 2 to3
- Mustard seeds - 1/4 teaspoon
- Cumin seeds - 1/4 teaspoon
- Oil - 2 teaspoon
- Salt as needed

- 2 - Potatoes
How To Make Papri Chaat
- Take a mixer. Put ajwain seeds and cumin seeds into the mixer. Grind them properly.
- Now take a bowl. Put Maida, red chili powder, heeng, crushed ajwain and cumin seeds, wheat flour, turmeric, oil, and salt. Mix them properly.
- Add water to the above mixture gradually and make hard dough from this mixture. Make small puris from this dough and roll them properly.
- Now take oil in a vessel. Put these puris into the oil and fry them deeply. Keep aside these puris for some time.
- Now again put lemon juice, grated coconut, chopped leaves of coriander, green chilies, and salt into the mixer. Mix them properly and make a fine paste from them. Let it aside for some time.
- Now to make red sweet chutney, mix tamarind and dates together. Boil them by adding water. And then cook them.
- After cooking grind those into a fine paste. Now add red chili powder and salt into the mixture. Let it aside for some time.
- Now whip the yogurt properly, and then add salt and sugar to the yogurt.
- Now take a sauce pan. Put curry leaves, cumin seeds, and mustard seeds into the sauce pan. Also add oil into the pan. Cook them properly.
- Now put this hot mixture into the yogurt. Stir it properly and let it aside for some time.
- Take pressure cooker. Boil potatoes and crush them properly. Add chat powder and salt into it.
- At the time of serving, crush puris little bit from the middle, add a one tablespoon of crushed potatoes.
- Then pour 3 tablespoon of yogurt over the mixture. Also add 1 tablespoon of red and green chutney over the mixture.
- Now dust the mixture with chat powder and red chili powder.
- Serve.

Some Useful Tips

To make round Papri make small round rolls from the dough. Make small holes upon the rolls using fork.
