Khasta Kachori
Brief Description

For The Dough:
- Maida- 2 cups
- Salt to taste
- melted ghee or vanaspati oil- ¼ cup
For The Filling
- yellow moong dal- ½ cup
- cumin- 1 tsp
- Asafoetida- ¼ tsp
- chili-ginger paste- 1 tsp
- red chili powder- 1 tsp
- garam masala- 1 tsp
- dry mango powder- 1 tbsp
- gram flour- 2 tbsp
- oil- 3 tbsp
- salt as required
How To Make Khasta Kachori
For The Dough
- Take all the ingredients for dough and make dough using as little water as possible.
- Knead nicely for a few minutes to make firm dough.
- Divide it into 12 equal portions and keep covered with a muslin cloth.
For The Filling
- Drain the moong dal completely of water.
- Take a pan and heat oil in it. Put asafoetida and jeera in it. Let the seeds crackle and put in moong dal. Fry it all for a minute.
- Add in the chili-ginger paste, garam masala, chili powder, amchur, gram flour and salt. Cook for 5 minutes while stirring.
- Take the balls of dough and fill with the mixture and deep fry in oil.
- Serve it hot with green chutney, curd or tamarind chutney.
