Christmas Pudding
Brief Description
Christmas pudding is a must have on the eve of Christmas. This recipe is also known as plum pudding but the tradition calls for the fact that for a Christmas pudding to be called a plum pudding it must contain actual plum flesh.
Preparation Time 45 mins Cooking Time 8 mins Number Of Serves 8-10 Ingredients for Christmas Pudding
- Raisins- 2 cups
- Brandy- 2 cups
- Candied fruits- 1 1⁄2 oz.
- suet or butter- 5 tbsp
- bread crumbs- 1 3⁄4 cups
- blanched almond- 1 cup
- dark muscovado sugar- 1⁄4 cup
- Flour- 3 tbsp
- shredded unsweetened coconut- 2 tbsp
- grated carrot- 2 tbsp
- Finely grated lemon zest- 1⁄2 tsp
- grated orange zest- 1⁄4 tsp
- cinnamon- ½ tsp
- nutmeg powder- a pinch
- egg- 1
- Dark treacle or molasses- 1⁄2 tsp.
- Guinness stout- 1⁄3 cup
- fresh orange juice- 2 tbsp
- fresh lemon juice- 3⁄4 tsp

- Brandy Butter
- Whiskey cream
How to Make Christmas Pudding
- Soak the raisins in brandy for 1 hour. Set the oven at 450° C to be preheated.
- Take a large bowl and add in candied fruits, raisins, bread crumbs, butter or suet, almonds, flour, sugar, carrots, coconut, cinnamon, zests and nutmeg. Stir it all well.
- Pour in beer, brandy and juices and mix well till it all is moist.
- Transfer the prepared batter in a greased ceramic/glass bowl. Cover the bowl with wax papers and foil. Now place the bowl into a deep pot and fill up the pot with boiling water. Put this pot into the oven and cook in the oven for 4-5 hours. Keep replenishing water as and when necessary.
- Take out the bowl from the oven and cool it. Take out the pudding and store it in cool and dry place for at least a day. It can also be refrigerated. It can be kept for up to 2 years.
- Before serving steam it again for an hour and then unmold on a plate.

The pudding should not be eaten immediately as it would not have set in and the flavors would not have had enough time to come out. For the flavors to mature and pudding to set in it has to be kept for a minimum of a day.
