Christmas Cake
Brief Description
Christmas cake is unique kind of fruitcake prepared specially on Christmas. To prepare this yummy cake you just need to follow this simple procedure.
Preparation Time 15 mins Cooking Time 30 mins Number Of Serves 4 Ingredients for Christmas Cake
- 1 pound Raisins
- 1 pound Dates
- One cup of fruits, orange and lemon peel
- One cup of Gold rum
- Two cups of Cashews
- Four cups of Maida
- Three teaspoon of Baking powder
- One lb Butter
- Four cups of Sugar
- One cup of Sugar for caramelized syrup
- No of Eggs - 12
- One teaspoon Cinnamon powder
- One teaspoon Nutmeg powder
- One teaspoon Cloves powder
- One teaspoon Dry ginger powder
- Three teaspoon Salt
- Four teaspoon of Pure Vanilla essence
How to Make Christmas Cake
- Firstly cut some fruits and put 3 tablespoon flour coating over it.
- Add some rum to the mixture and mix it properly.
- Place this mixture at room temp over night.
- Now divide some nuts in small pieces.
Carry out the above mentioned steps one day prior to the preparation of cake.
- Mix eggs and butter in a bowl and leave it at room temperature, a night before preparing the cake.
- Before starting the process make sure to heat the oven at temp of about 350 degree F.
- Properly measure sugar, flour and all the flavorings.
- Take a white enameled pot for the preparation of caramel. Use a medium saucepan in case you don’t have a pot.
- Put one teaspoon sugar in saucepan and then add two tablespoon water in it.
- Put stove on high flame and put the pan on the stove and leave it for boiling process.
don’t stir while boiling. - After 10 minutes, a cherry wood colored caramel will be formed.
- Take off the pan from the stove and add 1 cup water to the caramel mixture.
- Now stir all the ingredients properly so that the caramel gets completely dissolved and then leave it aside for sometime.
- Clean baking powder and flour properly before using it.
- Take a big container whisk some butter in the container and then add four cups of sugar in it and beat it again and do this till it becomes creamy.
- Now add eggs to this creamy mixture and whisk it properly.
- Put some caramel syrup, the flavoring powders, vanilla extract and salt altogether and mix them properly.
- Now add flour-baking powder to the mixture and fold this prepared mixture using spoon.
- When it gets properly mixed add fruits and nuts in it and mix it properly.
- Spoon this prepared mixture in 10inch non stick pans.
- Now start the baking process at about 350 degree F and do this for about 1hr.
Check the softness of the cake by putting a toothpick in the middle portion of the pan. - Now remove the cake from oven and put it in a cooling tray.
- With the help of a toothpick pierce the cake and put some brandy in it over it and leave it to soak the brandy.
- The brandy added on top will enhance the taste of cake.
- Finally remove cake from the pan and leave it for cooling.
- Lastly cover the cake properly with a wax paper and aluminum foil and then place it in fridge.
