Kancha Golla
Brief Description
Kancha Golla ia a quintessential Bengali sweet treat. It is easily available at mostly sweet shops in India. Kancha Golla is more like to famous rasgulla, it is originally from Bengal and made from milk, cardamom powder, sugar, Rose essence and squeeze lemon. Kancha Golla is very easy and quick to make.
Preparation Time Minutes – 20-30 Cook Time Minutes – 60-90 Serves 4 Ingredients For Kancha Golla
- 4 litres - liquid Milk (homo milk 3.25% suggested but any other can be used)
- 4 tbsp - powder milk
- 1 1/2 cups - sugar
- 1 cup - vinegar
- 4 pcs - cardamom
- Rose essence or essence of kewra
- 1/2 cup - water
For mawa preparation:-
- 1 1/2 cups - powder Milk
- 1/3 cup - butter
How to make Kancha-Golla
- To make Kancha Golla, take a pan and Boil the milk on medium heat. Keep stirring it continuously.
- Milk is boiled, Mix the vinegar and curdle it. Switch off the heat and keep aside for few minutes.
- Take them out chhena and draine it by using muslin cloth.
- Blend it properly till the smooth.
- (Mawa preparation)
- Set a pan on the stove at medium heat and add the butter.
- When the butter melt then mix the powder milk on medium heat. Keep stirring it continuously and be careful it is not to scorch. Mawa is ready, switch off the stove and keep aside.
- Now set a pan on the stove and mix the cardamom, sugar and water. Heat it well. keep stirring continuously till the syrup thick.
- Mix the 2-3 of the chhena in the syrup over heat and blend it completely.
- When the mixture starts bubbling, Mix the powder milk and stir it completely till it makes a halua-like consistency. Now switch off the burner.
- Add the some remaining of the chhena and 1-drop of essence. Knead well and remove the cardamom. Keep it for cool a slight and make rolled with mawa.
- Mix 1tbsp of the mixture and roll into the mawa. Shape it in the empty of your palm and roll it. Now again roll into the mawa, Place it again in the empty of your palm and put it on an oiled dish.
- Kancha Golla is ready to enjoy eating and serve chilled.
